Serves 4
Prep time: 15 minutes
Ingredients:
6 pita breads
1/2 cup spaghetti or pizza sauce
2 cups zucchini, chopped
1 small brown onion, chopped
1 bell pepper (any color), chopped
3 medium tomatoes, chopped
1 4 oz. can sliced olives
1/2 tsp. salt
1/4 tsp. dried basil leaves
1 cup mozzarella cheese, shredded
Directions:
- Preheat oven to 350 degrees.
- Place pita bread on ungreased baking sheet.
- Spread 2 tablespoons sauce on each pita bread.
- In a separate bowl, mix zucchini, onion, peppers, tomatoes, olives, salt and basil.
- Spoon vegetables on pita bread.
- Sprinkle with shredded cheese.
- Bake for about 8 minutes or until cheese is melted.
